At Montour Falls Tea Company, every great sip tells a story—of soil, sunshine, and neighbors who pour their hearts into their craft. We’re thrilled to partner with Wixom Farm of Mecklenburg, NY to bring a true farm-to-table-and-cup experience to the Finger Lakes: grass-fed beef, pasture-raised pork, and small-batch, locally crafted teas—made by a woman-owned, community-first shop in Montour Falls.

Picture this: you arrive at Wixom Farm on a crisp morning. The dew still clings to blades of grass, the sun peeks over rolling pastures, and the gentle lowing of Scottish Highland cows greets you. That’s where we at Montour Falls Tea Company start a new chapter of collaboration—bringing the best of land and leaf to your table.

Meet Wixom Farm — A Local Gem

Nestled in Mecklenburg, NY, Wixom Farm spans 122 acres of pastoral charm. Facebook+2Wixom Farm+2 They raise Scottish Highland cattle and Tamworth pigs, with a steadfast commitment to ethical practices: no hormones or steroids, antibiotics only when truly needed (and never at time of slaughter), and a closed herd system so much of the meat is born, raised, and finished right on site. A Farm-to-Cup Collaboration Recipe by Montour Falls Tea Company × Wixom Farm

Fresh • Local • Grass-Fed • Finger Lakes Flavor

The Story

When two local favorites come together — Wixom Farm’s grass-fed beef and Montour Falls Tea Company’s handcrafted Seneca Spiced Apple Tea — the result is a dish that celebrates everything we love about the Finger Lakes: warmth, flavor, and community. This recipe marries the sweetness of spiced apple tea with the richness of farm-fresh flank steak for a perfectly balanced, cozy autumn meal.

Ingredients

Tea Glaze & Marinade

  • 1 cup strong brewed Seneca Spiced Apple Tea (double strength)

  • 2 tbsp local honey or maple syrup

  • 1 tbsp apple cider vinegar

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme

  • Salt & black pepper to taste

Flank Steak

  • 1.5–2 lbs. grass-fed flank steak (from Wixom Farm)

  • Olive oil for brushing

Apple Relish (Optional)

  • 1 small local apple, diced

  • ½ small red onion, finely chopped

  • 1 tbsp fresh lemon juice

  • 1 tbsp chopped parsley or mint

  • Pinch of cinnamon and salt

    Instructions

  • Brew & Whisk Brew your Seneca Spiced Apple Tea double strength (2 tsp per cup, 5 min steep).Whisk tea, honey, vinegar, garlic, thyme, salt & pepper to create the glaze.

  • Marinate Place the flank steak in a shallow dish or resealable bag. Pour in half the glaze, coating evenly. Reserve the rest for basting. Marinate for 1–2 hours (or overnight for deeper flavor).

  • Grill or Sear Heat grill or skillet to medium-high. Brush steak with olive oil. Grill 4–5 minutes per side (for medium rare), basting with the remaining tea glaze in the last 2 minutes.

  • Rest & Slice Let the steak rest 10 minutes before slicing against the grain.

  • Top & Serve Spoon apple relish over the steak and serve with roasted veggies or greens. Pair with a warm or iced cup of Seneca Spiced Apple Tea for the perfect farm-to-cup experience.
